Weekly Food & Fitness Plan #44

Good morning everyone! Sorry up just now getting this up. We had a busy weekend and my internet service was pretty sketchy, so I decided to wait until today to write this post. We went camping on the lake over the weekend. TC's sister and future brother-in-law bought a new camper last week and were camping out there, so we decided to join them. We all had a really good time and have started to plan our fall camping schedule. It's always so much fun to have a lot of people join us.

I'm sorry I didn't get another post up last week for you all. Life got kind of busy and I just didn't take the time to do it. I'm hoping to do a "Life Lately" post for you all to update you on what has been going on. Fingers crossed that I get it up this week for you. We are trying to keep the house relatively neat and are grilling out a lot to save on dishes that have to be washed, so that is the reason for all of the grilled meals on the plan for the week. Plus, I figure we might as well enjoy the grilling season (of course in SC, you can really grill year-round!). So here is what I have planned for this week:

Monday - Leftovers
Tuesday - Grilled Honey Lime Chicken
Wednesday - Grilled Kielbasa
Thursday - Grilled London Broil
Friday - 4th of July Cookout

Tuesday - Yoga Meltdown
Wednesday - Ripped in 30
Thursday - Zumba
Friday - 3 mile run
Saturday - 3 mile run

Weekly Food & Fitness Plan #43

Happy Sunday everyone! I hope you're all having a great weekend. It's definite a steamy one in the low country. I think it's supposed to "cool down" into the upper 80's the next few days. Hopefully the humidity will go down with the temps, too!

I had a busy week and didn't get another post up :-( I started a WIAW post for you, but got side tracked and never finished it. I will try to do at least one this week...maybe a recipe? We'll have to see. Here is the plan for the week:

Weekly Food & Fitness Plan #42







Good morning friends and Happy Father's Day to all of the dad's out there! I hope you all have a fantastic day! We got back from vacation last night. Whomp, whomp. So today will be spent unpacking, grocery shopping and laundry doing. We are hoping to pay a visit to my father today as well, but we have a GI bug that is going through the family and strikes pretty fast, so we will have to wait and see today.

I'm back to full-on food and fitness planning this week. I got over 20,000 steps in all but one day that we visited the parks last week and had over 114k weekly steps in by Friday night. That's the most I've ever had!

Ok, so here is what I have planned for this week:

Hopefully I can get my run in today before the bug hits me or the sun goes down. We will see.

Weekly Food & Fitness Plan #41


Happy weekend everyone and hello from Disney World! I have no solid plan for this week except for a few character meals and lots and lots (and lots) of walking. We are having so much fun with a lot more on the way. So here is what I know for this week:


FOOD:
Sunday - All meals at the camper
Monday - Dinner at Trails End
Tuesday - Breakfast at 'Ohana
Wednesday - Princess Breakfast at Akershus Castle
Thursday - Lunch at Hollywood & Vine
Friday - Last dinner at Disney :-(
Saturday - Back to normal food

FITNESS:
Sunday - Walking
Monday - Some more walking
Tuesday - Maybe some walking
Wednesday - Walk around a bit
Thursday - Lots more walking
Friday - Rest & Relax
Saturday - Another rest since we will be on the road

Zucchini Carrot Oatmeal Muffins

Happy Hump Day everyone!! I hope you're all having a great week. I've been so busy trying to take care of things for our trip later this week. I think I'm doing a pretty good job of remembering everything that I need to. But I guess we won't find that out until we get there! Ha! If I forget anything, I'm sure there will be a WalMart near by. Isn't there always? Things have been crazy busy at work for me, too. I'm not sure why there is so much going on all of the sudden, but at least it helps my days to go by faster. I just hope that I can take care of the giant stack of work that I have on my desk before it's time to leave! Fingers crossed!


So I've had a lot of zucchini in my refrigerator lately. When I would go get strawberries from the local farm, I would pick up a couple of zucchini, too. I think my family got pretty tired of it quickly though, so I had to start coming up with new ideas. I've made zucchini bread, sauteed zucchini, miniature zucchini frittatas and these Zucchini Carrot Oatmeal Muffins. I know that sounds like a whole lotta healthy right there, and it is! But I promise they are delicious, too! I made them and froze them. I thought they would be great to grab and go while we are on vacation. Addison had one over the weekend and loved it. She even shared them with our neighbors. She called them "Cinnamon Muffins." I didn't tell her they had zucchini and carrots in them. Why ruin it? Here's the recipe:

ZUCCHINI CARROT OATMEAL MUFFINS
Servings: 24
Points+: 5
Adapted from Yellow Bliss Road

1/2 cup rolled oats
1 cup all purpose flour
1 1/2 cup whole wheat flour
1 1/2 cups sugar
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
3 large eggs + 1 large egg white
3/4 cup coconut oil
1 cup grated zucchini
1 cup grated carrot


Preheat oven to 350 degrees.

Mix dry ingredients in a large bowl and set aside. In a separate bowl, whisk eggs and oil. Stir in grated zucchini and carrots. Add to dry ingredients and stir until combined.

Fill muffin cups about 3/4 full and bake for approx. 20 minutes. They are done when a knife inserted comes out clean, and tops spring back when lightly touched.

Weekly Food & Fitness Plan #40

Hey everyone! I hope you're all enjoying your weekend. I'm happy to report that things have finally slowed down a little bit for us this past week. Of course, slowed down is a relative term for us since we always seem to have something going on. We are trying to pack and get ready for our trip to Disney World. I don't know who is more excited about going, me or Addison! I'm really looking forward to our vacation.

I've been doing a lot of baking/cooking to prep for our trip. I'm trying to have most things done and in the freezer or fridge so that we will be able to have a lot of foods to grab and take with us. I'm going to try to have a plan for this week, but won't be surprised if it changes during the week.

Tuesday - Grilled Hamburgers
Wednesday - Leftovers

Friday - Rainforest Cafe
Saturday - Family Dinner

I'm not sure how much exercise I will be able to get in after we get down there. I'm still going to wear my FitBit and can't wait to see how many steps I get in every day.
