Weekend Recap

Well, hey there! I hope you all had a fantastic weekend! We definitely did. It was a busier one than I had planned, but it was a good one.

Friday started off with a hair appointment bright and early in the morning. After that, we headed to Home Depot to pick up some trim for the floors and I got some flowers to plant around the house. We had lunch with TC's brother and sister-in-law where we had an amazing pumpkin cupcake. I decided that I would have to make some pumpkin cupcakes over the weekend, too. We just hung around the house the rest of the day trying to figure out what all needed to be done.

Saturday, was such a beautiful day and we worked outside the entire day. We got all of the planting done, but didn't get to get the mulch put down since the place we buy it from closed a half an hour before TC and my dad got there. Boo! But we still got so much done around the yard. I will post some picks acter the mulch is down, but here are some before pictures: 


My parents came over to help us out, too. I have a black thumb, but my mom has a pretty green one. So it's nice to have someone that has an idea about plants around. Our biggest news from the day is that Camden got his second tooth. Just over 4 months and has 2 teeth already. Please time slow down a little bit!! He loves to talk now and is fascinated by his hands!

We went to church Sunday morning, then headed up to my parent's house so that TC could help my dad take down a tree that he had been worried about for a year or so. I don't do well in situations like this! And couldn't watch.
 
Thankfully, it came down with no problem. It's so nice when things work out that way!
And now we have a ton of firewood for the winter months! We had a nice dinner with my parents and then came back home to get ready for the week.

I also got a couple of great runs in over the weekend! My pace is picking up and I'm almost back to a sub-10 minute mile! 

Nothing definite planned for this week yet. We have a meeting today with the pastor about Camden's baptism and the poor little guy gets his 4 month shots this afternoon. I see many cuddles in our future :-)

Weekly Food & Fitness Plan - Week 4

Good morning everyone! I hope you are all having a great weekend. It has been absolutely beautiful here! I think Fall might have finally arrived and I couldn't be happier. It's funny that when I used to live in Pennsylvania, I hated when Fall came. It meant the nice Summer weather was over and even colder weather was on its way. Now that I live in the South, I welcome Fall on the cooler temps it brings. Funny, huh?

Thankful Thursday


My friend Rachael at Running with Rachael started a new series of blog posts called "Thankful Thursday." I think this is such a great idea. In today's society, it's so easy to dwell on the negative aspects of life and forget about those things for which we are thankful. So I want to link-up with her and take the time each week to tell you about my blessings. I will discuss one thing each week for you all. This week, I am especially thankful for my father. 

 Yes, I could have started off my thankful series talking about my husband or my children. I will discuss all three of them in future posts because, yes, I am thankful for them. However, this week, I want to talk about my dad. 

 He has been a rock star for us this last week helping to install our flooring. I thanks him numerous times over the last week, but still feel like a simple thank you just isn't enough.
So I dedicate my first Thankful Thursday post to him. really couldn't have asked for a better dad. Ever since I was small, he's always been so incredibly supportive of (almost) everything that I have done. 

 Yes, there were times that what I wanted to do wasn't the best thing in the world and he wasn't 100% supportive of those things. But who can blame him? He just wanted what was best for his girls. 

 He worked his a$$ off to make sure that we had everything that we needed and most of what we wanted. He set a great example of what a husband and father should mean and do for his family.
Even as adults, he is still here for my sister and I. He's always happy to help us in any way that he can whether it's physically, mentally or emotionally. 
 He's also an amazing grandfather (or Papa.) He loves his grandchildren so much.
I am eternally grateful for the blessing that has been my father. There are so many more things I could say about this wonderful man, but there just isn't enough time.
So I will simply say this, Thank you for everything. I love you Dad!

What I Ate Wednesday

The floors are done! D-O-N-E! Yay!! Well, we still have to finish the trim work, but we were able to put my kitchen back together last night. Oh happy day!! Now on to the next project, right!? Haha! Isn't that the way home ownership works? You always have a new project that you want to work on. Oh well. I just have to say that I am in love with my new floors. They look amazing! You'll see. I'll do a post on them so you can all share the joy with me!!

Ok, ok. So since it's HUMP DAY (Woot, woot!!), that means it's time for another edition of WIAW brought to us by Peas & Crayons!!! I missed it last week, but made sure to get in on this week's post!


BREAKFAST:
Two eggs and turkey bacon with an apple.

SNACK:

Nature Valley Granola Thins

LUNCH:
Ham & Cheese Wrap, Cracker Chips and some carrots

SNACK:
Greek Yogurt &
Quinoa Oatmeal

DINNER:
 Hamburger Helper and Green Peas

DESSERT:
Skinny Cow Ice Cream Sandwich - old floors in the background :-)

I've had a few days lately with out of control snacking between meals. I have no idea why, but I really need to get it under control or I definitely won't be dropping these last 10 or so pounds of baby weight!

Weekend Recap

Good morning! Hope you all are having a great start to your week. This weekend was so busy and went by way too fast! I still have so much to so still.

Here is what we were up to:

Friday evening we made a trip to Home Depot to buy the flooring for the kitchen that we had decided on. Unfortunately, the one we had chosen wasn't an in-stock item. We were going to order them, but instead decided on some bamboo flooring. I'm so happy we did because I am loving the way they look! After spending way too much time and money in Home Depot, we stopped my Cracker Barrel for some dinner and headed home.

Saturday, we were up bright and early. Well, Camden slept in a little bit, but we'll take that! TC and my dad started on the floors early only to find that the sub-floor underneath the laminate that was down was completely rotten.
Boo! So they had to replace the floor under the floor, which meant that it would take an extra day to finish the floors. While they were working on the floors, my mom and I took the kids and met my sister, neice and a friend at a plant swap.
It was my first time, but it was pretty fun.
I might even go to the one they have in April. Camden just couldn't take all the excitement and fell asleep in the Ergo.
After the plant swap, we went to a local pizza place for lunch
and then did some Carter's outlet shopping! We also had to stop at Yobe for some yummy frozen yogurt!
My parents stayed for dinner Saturday night and then went on their way home. We were all so exhausted and crashed pretty early. Here is a picture of the plants we got:

Sunday, I was pretty excited to get in a 3 mile run first thing in the morning. Saturday had been so busy, I didn't get any exercise in. When I got back from my run, my parents were already at the house. TC and my dad continued working on the floors while my mom and I took the kids to my sister's house (it was her birthday) to help her plant the some of what she had acquired at the plant swap. After a few hours there, we went back to my house. My parents went home to get ready for dinner with my sister and her family while I went grocery shopping. When I got back, we were back in the car on the way down to meet everyone for dinner. We stopped by Home Depot for some trim, but found out we'll have to go to a different store for that. We had some cake with my sister and parents then it was time to go home.

I had to include this picture of Camden. He has become fascinated with his hands. It's so adorable!

Like I said, a busy weekend with too many miles spent in the car, but hopefully the floors will be done within the next day or two, so I can put my kitchen back together! My dad is working on the floors while TC and I are at work today. Is he great, or what?! Not sure how the meal plan will go until I have everything back together, but we'll see.

Cherry Limeaid Cupcakes


Happy Friday everyone! We made it through another week! I'm lucky that this is my Friday off. Other than my hair appointment this morning, we don't have any other plans. Well, any other definite plans that is. I am planning to get some stuff done around the house. We're trying to spruce things up a bit. I guess you could call it our "Fall Cleaning." Maybe it's because I was very pregnant during the Spring. Maybe it's because it's finally starting to cool down a bit and we can get outside and enjoy the nice weather. Whatever the reason, I'm hoping to clean up my flower beds this weekend. They have been severely neglected and I plan to remedy that this weekend. Be on the look-out for some pictures on Instagram. Might even do some before and after shots!


So here it is! I'm FINALLY posting the recipe for the delicious Cherry Limeaid cupcakes that I've been talking about the last couple of weeks. I've been on a cherry limeaid kick lately and wanted to make some cupcakes with it. It also helped that I'm still working on the pantry purge and had some white cake mixes in the pantry that I needed to use. And it didn't hurt that we were having dinner at my parents' house with some friends and I had volunteered to bring dessert. I'm telling you, you need to make these cupcakes. Everyone said they were delicious! The cupcake part is kind of tart, but the sweetness of the frosting goes along great with it. I love sour things and was afraid that maybe the cupcakes were too sour, but everyone said they were great. Here's the recipe:

CHERRY LIMEAID CUPCAKES
SLY Original
Servings: 24
Points+: 4


Cupcakes:
1 box white cake mix
1 12-oz. can diet lemon-lime pop
2 egg whites
1 tub sugar free cherry limeaid drink mix
2 small jars marishino cherries, drained

Frosting:
8 ox. 1/3 less fat cream cheese
1 c. powdered sugar
2 - 3 T. sugar free cherry limeaid drink

Preheat oven according to directions on cake mix box.

Line cupcake pan(s) with 24 cupcake liners or use cooking spray to lightly coat 24 spots. Place one cherry in the bottom of each liner.

In a large bowl, combine cake mix, pop, egg whites and drink mix. Beat together with an electric mixer until thoroughly mixed. Pour mixture evenly into cupcake liners in pan, filling each about 2/3 full.

Bake according to direction on cake mix box. Let cool completely before frosting.

In a separate bowl, combine 2 T. of drink with the cream cheese and the sugar. Beat with an electric mixer until smooth and then frost the cupcakes. If frosting is too stiff, you can add additional drink until it is to your desired flavor and consistency. Top each cupcake with sugar if desired and one more cherry. Enjoy!

Weekend Recap

Hey, hey! Happy Monday everyone! I hope you all had a great weekend. Ours was pretty busy, so of course, it went my incredibly fast. Definitely not ready to be facing another work week, but what can you do?

Friday was my day off, so we took advantage of getting some things done around the house. We knew that Sunday would be busy, so we tried to get our normal Sunday things done on Friday...does that make sense? I think of it as "re-setting" for the week.

Saturday, we took Addison to a Build and Grow workshop at Lowes. It was the first one we've ever taken her to, so we didn't know what to expect. She had so much fun! Of course, mommy and daddy did most of the hammering, but she was up in it and did a great job of adding the stickers. Lol! The rest of Saturday was spent getting more things done around the house.

Sunday, we took Camden to church for the first time. I know it's horrible that he is 3 1/2 months old and we still haven't taken him to church. I could give you all kinds of excuses for not taking him, but the bottom line is that we finally took him. We got a chance to meet our new pastor, too. He's been there about a month and a half now. He seems very nice. He's younger than I expected. Kind of reminds me of Michael Phelps. After church, we had breakfast with my parents and my sister and her family (they surprised us at church). After running home to change clothes, we went up to my parents' house for the rest of the day. We had a nice day and some friends of my parents from Florida got there in the evening and will be spending a day or two visiting.
I made some delicious Cherry Limeaid cupcakes for dinner Sunday. They were so good and will be showing up on the blog soon. And yes, they are WW-friendly. Only 4 pts+! 

Unfortunately, I didn't get my run in yesterday like I had planned. By the time we got home from church, it was way too hot to run. I was planning to do a workout after the kids went to bed, but I was too content sunggling with my baby boy to be bothered with exercise. Oh well. Life goes on.

So here we are with another week ahead of us. I hope you all have a great week. It might be a busy one again for us, depending on TC's schedule. Eventually life will slow down, right?

Weekly Food & Fitness Plan - Week 3



Happy Sunday everyone! I hope you are all having a great weekend! Ours has been pretty busy and today will be as well. Before it all gets going, just wanted to share this week's plan with you.

I did really well sticking to my plan this past week. I had to swap my rest day for a Ripped in 30 day because I'd had a pretty early morning and was pooped by the end of the day. But I did get the Ripped video in. Also, we ended up going out to eat on Friday. Back when I was on maternity leave, we decided that we would go out to eat one night each week after I returned to work, so we went out for Mongolian BBQ Friday.

Here's what I'm planning for this week:

Dinner Plan:
• Sunday - Dinner at my parents
• Monday - Grilled Pork Chops w/ brown rice & sautéed zucchini
• Tuesday - Crockpot Meatloaf w/ mashed potatoes and corn
• Wednesday - Hamburger Helper w/ sautéed vegetables
• Thursday - Leftovers
• Friday - Dinner Out
• Saturday - Grilled Chicken Cordon Bleu w/ couscous & sauteed vegetables

Workout Plan:
• Sunday - 3 mile run
• Monday - Yoga Meltdown - Level 1
• Tuesday - 3 mile walk
• Wednesday - Rest
• Thursday - Ripped in 30 - Level 2
• Friday - 3 mile walk
• Saturday - 3 mile run

What I Ate Wednesday

Who knows what day it is?


That's right! Happy Hump Day everyone!!! I think I might be the last person to have seen this Geico commercial. I'm sorry if it's old news to you, but it's still hilarious to me. You'll probably see it pop up from time to time when I do my Wednesday posts.

So since it is Wednesday, that means its time for another edition of WIAW!! I did pretty good taking pics yesterday, but I did miss a couple of things. Really hoping you'll forgive me on that...

BREAKFAST:

Breakfast Burrito (7 pts+) with cantaloupe and steel cut oats (4 pts+) made with 1/2 c. milk (2 pts+)

SNACK:

Apple slices with toffee apple dip (6 pts+)

LUNCH:

Ham & Cheese Wrap (5 pts+) with side salad (without lettuce) and some cracker chips (1 pt+)

SNACK:

Pennsylvania Peach & an Oatmeal Square

DINNER:

Taco Ziti (9 pts+) with black beans (3 pts+)

DESSERT:

Skinny Cow ice cream sandwich (4 pts+)

I had a couple of splurges that I really could have done without, but the toffee dip was calling my name! At least I only had a little bit even though it was staring me down all day! When you figure in out walk this evening, I still did ok, but could have made some better choices. Oh well! Tomorrow's a clean slate!
